Matcha White Chocolate Macadamia Nut Cookies

Servings 8 cookies

Ingredients

  • 70 g (1/3 cup) unsalted butter 
  • 65 g (1/3 cup)  raw cane sugar
  • 35  g (3 tbsp) caster sugar
  • 1/4 tsp salt
  • 1/2  whole egg - at room temperature
  • 1 egg yolk  - at room temperature
  • 125 g (1 cup) all-purpose flour
  • 2 g (1/2 tsp) baking powder 
  • 10 g (1+1/2 tbsp) pure matcha powder
  • 100 g (1/2 cup + 1tbsp) white chocolate chips
  • 45 g (1/3 cup) macadamia nuts

Instructions

  1. Chop macadamia nuts according to your preference.

  2. In a large bowl, melt unsalted butter in the microwave. You can melt the butter in a sauce pan if you prefer.

  3. Add raw cane sugar, caster sugar, and salt. Mix well.

  4. Incorporate a mixture of half a whole egg and one egg yolk. Mix thoroughly.

  5. In a separate bowl, combine flour, baking powder, and matcha powder. Sift the dry mixture into the butter mixture. Gently stir and fold until well combined. Be cautious not to overmix.

  6. Fold in chopped white chocolate and macadamia nuts.

  7. Scoop out small balls, Flatten each ball slightly. Decorate with reserved chopped macadamia and white chocolate if desired. Place them on a tray and cover with the film, let it cool in the fridge for at least one hour.

  8. Preheat the oven to 180℃/350℉.  Place chilled cookies on a baking tray with baking paper. They will expand so keep some space between each cookie. Bake for 12-15 minutes or until slightly golden.

  9. Allow cookies to sit for 10 minutes before transferring to a rack.
