Spiced Honey Date Granola


  • 2+1/2 cups old-fashioned rolled oats (GF if desired)
  • 1/2 cup raw, unsweetened shredded coconut
  • 1/2 cup raw almonds, coarsely chopped
  • 1/2 cup raw walnuts, coarsely chopped
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp sea salt
  • 1/3 cup coconut oil
  • 1/4 cup honey
  • 1/2 cup medjool dates, pitted, roughly chopped


  1. Preheat the oven to 140℃/ 285℉.

  2. In a large bowl, combine oats, coconuts, almonds and walnuts. 

  3. To a small saucepan, add coconut oil, honey, cinnamon, cardamom and salt then warm over medium heat. Whisk to combine.

  4. Pour the liquid mixture over the dry ingredients and stir well.

  5. Pour mixture onto an oven tray lined with baking paper. Make sure the granola is evenly spread.

  6. Bake in the preheated oven for about 45 min, or until lightly golden. Remove from oven and stir every 10 minutes to avoid burning. Let it cool.

  7. Once cooled, add the chopped dates. Store in an airtight container.
