Blackberry Thyme Soda

There is nothing like a refreshing sparkling drink on a hot summer day. This is one of my latest favorites. I just love the combination of blackberries and thyme.

You can also enjoy with black tea instead of sparkling water. This makes a refreshing iced tea, it’s so tasty too.

Blackberry Thyme Soda

Servings 4

Ingredients

Blackberry Thyme Syrup

  • 1 cup fresh or frozen blackberries
  • 1/3 cup sugar - I use organic cane sugar
  • 1/2 cup water
  • 5 sprigs fresh thyme

Assembly

  • ice cubes
  • sparkling water
  • lemon - optional
  • extra thyme for garnish

Instructions

Blackberry Thyme Syrup

  1. To a saucepan, add the blackberries, sugar, water, and thyme. Bring to a gentle boil. Once the blackberries have started to soften, gently mash them by a wooden spatula.

  2. Adjust the heat to low and let the mixture simmer uncovered for about 20 minutes, stirring occasionally.

  3. Strain the mixture into a bowl. Press the mixture to get as much liquid as possible. Let it cool. 

Assembly

  1. In a glass, put ice cubes then pour sparkling water. Then pour the blackberry syrup and squeeze lemon juice into it. Give it a stir, garnishing with fresh thyme and a slice of lemon. Please adjust the amount of syrup and lemon juice to your liking.

Helpful Tips

You don’t need to throw away the blackberry puree that remains in the strainer, you can eat it as is. I like enjoying with yogurt.
