Mixed Berry Sauce Pancakes

This is my new favorite breakfast, fluffy soufflé pancakes with whipped cream and delicious mixed berry sauce. Discover the taste of summer with sweet and tangy berry sauce, perfect for brightening up your morning.

Mixed berry sauce pancakes

Ingredients

Mixed Berry Sauce

  • 1 cup frozen mixed berries
  • 30 g (3 tbsp) sugar
  • 1 tbsp lemon juice

Whipped cream

  • 120 ml (1/2 cup) whipping cream
  • 13 g (1 tbsp) sugar

Japanese Souffle Pancakes

  • 2 large eggs
  • 30 ml (2 tbsp) milk
  • 24 g (3 tbsp) flour
  • 1 g (1/4 tsp) baking powder
  • 1/2 tsp vanilla extract (optional)
  • 1/2 tsp lemon juice (optional)
  • 26 g (2 tbsp) sugar

Instructions

Mixed Berry Sauce

  1. Put the mixed berries in a small pan, add the sugar and cook it for about 5 minutes. Mix occasionally. Remove it from the heat and add the lemon juice. Let it cool. You can also make it with a microwave. Toss berries and sugar in a microwave-safe bowl until well combined. Microwave for 1-2 minutes. Add the lemon juice.

Whipped cream

  1. Put the whipping cream and sugar into a mixing bowl, whip it up until medium stiff peaks. Keep in the fridge before using.

Assembly

  1. Once your pancakes are baked, transfer to a plate. Put a big spoonful of the whipped cream and pour the mixed berry sauce. Sprinkle powdered sugar for presentation if you like. Enjoy as soon as they are ready:)

Helpful Tips

I used frozen berries, but you can also use fresh berries,  just adjust the amount of sugar to your liking.
