If I hadn’t lived in Dubai, I wouldn’t have made this. Before living in Dubai, I didn’t know much about spices; I was not a big fan of spices and dates.
Now, I’m really into them. I’m still not too familiar with using spices for baking, so If you have a favorite recipe using spices, please send it my way!
Preheat the oven to 140℃/ 285℉.
In a large bowl, combine oats, coconuts, almonds and walnuts.
To a small saucepan, add coconut oil, honey, cinnamon, cardamom and salt then warm over medium heat. Whisk to combine.
Pour the liquid mixture over the dry ingredients and stir well.
Pour mixture onto an oven tray lined with baking paper. Make sure the granola is evenly spread.
Bake in the preheated oven for about 45 min, or until lightly golden. Remove from oven and stir every 10 minutes to avoid burning. Let it cool.
Once cooled, add the chopped dates. Store in an airtight container.
You can use maple syrup instead of honey, it works great too. I usually bake granola using maple syrup at 150℃/300℉, but when I bake with honey, I bake at 140℃/285℉, and a bit longer. Because honey makes the granola turn golden faster so it might burn before oats are baked well.
